Description
Crafted from band patterned high carbon damascus from master blacksmith Markus Balbach in Germany, this chef knife profile is one Wes uses daily in his own kitchen prepping meals for his family.
The profile borrows Santoku heritage with a slight upward handle angle to provide clearance while preparing food. The spine has a slight dimple for a natural landing location when more aggressive pressure is required to complete the task. This culinary tool is 11.25″ OAL with a cutting edge of 6.5″.
Scales are stabilized and bookmatched maple burl secured with smoke grey G10 pins and one carbon fiber pin asymmetrically placed. The scales have also been sculpted for a natural pinch grip depending on the need at hand. The scales have been sealed and buffed with hand rubbed wax.
